PARBOILED: It is parboiled, meaning boiled in the husk. Parboiled rice conserves more nutrients and is a better source of fibre, calcium, potassium, and vitamin B-6 than regular white rice. Parboiled rice does not lose as much starch as normal rice when cooking. This means that it always remains fluffy when cooked. Goan rice is also called Ukade rice and is known for its reddish color and thicker grains.
